Now that the new site is up I feel so overwhelmed with playing catch up! I hate this feeling. Can’t focus, want to snack, do not need to snack. Feeling concern over whether or not I’m going about it correctly. I am not a genius when it comes to working with the computer and I spend what I think is too much time reading tutorials and writing questions to my designer. I feel like I am starting over again and it is causing me to think about “comfort food”. I think about food a great deal,do you? But, at a time like this I want to feed myself warm, soothing, food that reminds me of a simpler time. A time before computers, and social media, and stats!
What is your favorite “comfort food”? I crave fresh made soup, chicken noodle or tomato, pot roast or beef stew, full of colorful carrots and peas, any kind of potatoes, warm and creamy or cheesy. Mmmmm…cheesy – sometimes pizza does the trick, or a grilled cheese. Today it’s lima beans and bacon. I could eat the whole pot! Don’t worry, I won’t. I’m going to play catch up. You know why? If I do I’ll feel better. I can check something off my list. I can share a post with you!
I like to use fresh shelled peas or beans when making a recipe like this but dried will work just fine too. Dried limas can be substituted for fresh in this recipe easily. In fact they can be substituted for each other in most recipes. Limas pair well with onions, tomatoes, carrots, garlic, ham and sausages. They take on a richer flavor when prepared with something from the onion family. Of course I threw in a handful of shallots, members of the onion family.
Did you know lima beans are full of fiber? 13 grams in a cup. They also pack a powerful boost of folate and magnesium as well as 24% of our daily iron intake. In the need for a bowl full of comfort? Try a cozy bowl of buttery, healthy for you limas. I feel better already!

I love lima beans but I’ve never seen or cooked fresh ones. Do you buy them at a specialty store?

I got these at our Farmers Market but sometimes stores like Whole Foods or Fresh Market will have fresh picked beans. I’d ask my produce guy!
