Today the weather finally turned sunny and cooler, which I am very happy about. We’ve had unseasonably warm weather in Greensboro for the last couple of weeks and I’m ready to throw on a sweater! I am also in the mood for a steamy hot, delicious bowl of soup. My mind keeps bouncing back and forth between lentil, corn & crab chowder, creamy vegetable, or black bean. Which should I make? What is your favorite?
Until I can make up my frazzled mind I am sharing a few old posts with some of my favorite soups.
Root Soup – a soup suitable for fall and winter root veggies.
Roasted Tomato and Garlic – tailor made to go alongside a rustic grilled cheese.
Parsnip Soup – Parsnips, nutty, sweet and full of Vitamin C, so important during these cold winter months.
Curried Butternut Squash and Carrot Soup – A twist on basic butternut squash soup, this one includes ginger, great for our tummies, honey and curry. Can you say “yummy”?
