You know what I dipped in chocolate if you’ve followed The Orange Bee in 2012. I declared January “orange” month and I’m having a blast choosing and dreaming up orange recipes. Such is the case for this recipe.I found this great idea at Teacher by Day – Chef by Night: http://teacher-chef.com/ Oh did you guess? I dipped clementines or cuties, as they are often referred to, in melted chocolate. Heaven right here in my own kitchen! Talk about quick and easy, only three ingredients and maybe just a bit healthy in the sweets department. They make a lovely little gift, a tasty snack for the kiddos and I had a hard time keeping my man Dan away from them. As I recall, he polished them off shortly after I took the photos. You’ve got to try this.

Chocolate Covered Clementines
- 1 clementine (peeled)
- 1/4 cup chocolate chips (semi-sweet or whatever you like)
- 1 teaspoon shortening
Melt the chocolate and the shortening in the microwave on half power for 30 second increments, stirring after each 30 seconds. This will take at least a minute and a half. Make sure all the little white strings are off of each slice. Dip about half of the orange into the melted chocolate and allow the extra to drip off of the orange. Carefully place dipped slices onto a sheet of wax paper and set in the fridge for about 30 minutes. Once hard these can be stacked on each other and packed for gifts or lay out on a tray for tasty treats.
