I promised you recipes featuring fresh fruits and veggies of summer. Here is a recipe you can play with, add to, change, etc. and I’m convinced it will be delicious, no matter how you dice it. I had a few peaches hanging around and fresh garden tomatoes staring from the window sill, begging to be eaten. Mixing the two colors made the most enchanting presentation. Don’t you love the colorful jumble of ripe red tomato, dark green jalapeño, green onion and sunset colored peaches?The recipe came together based on what I had on hand, as is often the case in my kitchen. I could have added some fresh herbs, used lemon or orange juice instead of lime, green or yellow peppers, poblanos, serranos, red onion, you see the possibilities are endless. The sweet juicy peaches and newly picked tomatoes offer a fresh flavor with an occasional hot snap from the jalapeño. Peach-Tomato salsa is the perfect summer corn chip dip or is equally yummy on fish, chicken or pork.
Ingredients:
2 peaches, diced
2 small tomatoes, diced
1/2 red pepper, diced
1/2 jalapeño, minced
Juice of one lime
1 green onion, thinly sliced, green and white parts
Place all ingredients together in a bowl and toss gently.
